Learn about the impacts of wildfire smoke on Oregon wines and current approaches in how the industry is mitigating the impacts of smoke on wine - featuring Cole Cerrato, PhD Assistant Professor, OSU Smoke Wine and Grapes Analytical Lab
Cole’s relationship with food and agriculture stretches all the way back to the small South Florida town he grew up in. Raised by his grandparents in the tiny town surrounded by orange groves in all directions, he was impacted by many generations and cultures of food! He learned that good food can bridge gaps and build relationships with friends and the community. Cole has taken a similar approach in his professional career as a chemist, using food as a medium to bring people together to teach them about chemistry and how we can improve our community through chemistry. In graduate school at University of South Florida in Tampa, Florida, he found that the chemistry associated with alzheimer’s disease can be reduced using beets! After earning his doctorate, Cole and his dog, Andi, moved to Corvallis, Oregon to study the impacts of wildfire smoke on wine at Oregon State University with Elizabeth Tomasino, Ph.D. Cole is currently an Assistant Professor Senior Research and the manager of the Smoked Wine and Grapes Chemistry Lab in the Department Food Science and Technology at OSU. In his talk he will discuss the impacts of wildfire smoke on Oregon wines, some of his research, and current approaches in how the industry is mitigating the impacts of smoke on wine. RSVP here
